White Radish Kimchi
A Mild Kimchi made from Korean Radish
Ingredients
(All measurements are approximate, and can be varied according to taste.)
About 1 1⁄2 to 2 lbs. julienned Lobak or Daikon Radish (medium-sized radish)
1 tbs. vinegar
1⁄2 tbs. salt
1 tbs. powdered sugar
1⁄4 tsp. garlic powder
1 scallion/green onion, chopped
1⁄2 cup julienned carrot
Method
- Mix all ingredients together, adjust to taste. Season overnight at room temperature.
Yield
Makes approx. 1 quart of kimchi
